For the dressing

light mayonnaise

save the other half of lemon for serving

Instructions
Cook the pasta according to the instructions on the packet. Drain and leave to cool down completely.
Using a sieve, drain and rinse the canned red kidney beans, chickpeas and sweetcorn.
Add everything into a large mixing bowl. Add chopped leeks and tomato.
Add light mayonnaise, Greek yogurt, and juice of ½ lemon. Season with a pinch of salt and black pepper.
Toss thoroughly and taste. season again if needed. Serve as it is with a slice of toasted bread, or with grilled meat and enjoy!
