Enjoy the typical tangy flavour of a mojito, just totally alcohol and sugar-free! Perfect for large crowds, small gatherings but you can also make it for one! Just scale it up as needed!
Wash and dice the strawberries. Tear mint leaves by hand and add everything into a glass (or jug).
Crush the berries and mint using a muddler or the narrow end of a wooden spoon. Add lime juice.
Add diet lemonade, leave to fizz up and stir.
Serve with a slice of lime, mint leaves and ice (optional).
Notes
Possible swaps:
Good quality strawberry conserve (preserve) instead of fresh strawberries (1 handful of strawberries = 4 tablespoon of strawberry conserve).
Lime juice from a bottle for freshly squeezed lime juice (1:1 ratio).
Add soda water and double the amount of lime juice (or use lime juice and lemon juice; 1:1 ratio) instead of lemonade. Taste and add sweetener if needed. Sugar-free Sprite, 7Up or similar fizzy drinks will also work in this mocktail.
